Start with orange juice. Set the juice aside to freeze and use later. Cut the peel into small pieces. Add orange peels until your quart-size jar is half full. You can add some dried rosemary if you like.

Heat the vinegar in a saucepan on the stovetop or in a bowl in the microwave. While your vinegar is hot, pour it over the orange peel in the jar. Cover the jar with a lid and leave for 24 hours.
